Turkey & Quinoa Stir Fry
Ingredients
- 1 cup of organic quinoa
- 2 cups of mixed veggies
- 1/8 cup of chopped onion
- 2 tbsp of minced garlic
- 2 medium tomatoes, diced
- Sea salt
- 2 tsp reduced sodium soy sauce
- Black pepper
- 1 tbsp of extra virgin olive oil
- 1 lb organic ground turkey
- 1 egg (white only)
Instructions
Prepare quinoa according to directions.
Brown the turkey, then add all other ingredients. Cook until turkey is cooked through and onions are translucent, about 8-10 minutes.
Once quinoa is cooked, add to the turkey pan and cook an additional 5-8 minutes.
